This flour comes from soft wheat and is highly water-absorbent. It is suitable for both plain and spiral mixers and it can also be allowed to prove for small amounts of time, in order to produce crispy crusted bread with extremely good texture. It can be combined with durum wheat flours to create traditional bread.
