Bread with germs
Υλικά
- 5000 g. of flour with germs,
- 100 g. yeast, 100 g. of vinegar,
- 3000 g. of water.
Εκτέλεση
- Mixing time: 4 minutes on 1st speed, 6 minutes on second speed,
- Dough temperature 27oC. Then, rest the dough for 15-20 minutes,
- Cut into the desired weight. Format bread mold,
- Proof at 32oC and 75% humidity for 35-40 minutes,
- Bake at 220oC steam for 40-45 minutes (depending on weight)
